Starter
Seared scallops with caramelised plantain, boudin noir puree and reduced balsamic.
Wood pigeon breast on wild mushroom blini with walnut oil.
Goose liver mousse with pickled shallots, parsnip dumpling and cranberry dressing.
Crisp parmesan cup filled with goat’s cheese cream, sunblushed tomatoes and lemon crisp.
Smoked fillet of trout on crumbly, mature cheddar biscuit, with avocado puree and chilli oil.
Main course
Oven roast venison with celeriac puree, baby turnips and a red wine and dark chocolate sauce.
Pan fried sea bass with caponata, on chilli and cho cho linguini.
Braised cheek of beef with fondant plantain and a sprout, pancetta and roast chestnut salsa.
Sweet plantain and basil ravioli with sakura cress and lemon oil
Roast poussin with parsnip puree, devils on horseback and buttered baby leeks
Crab and fennel risotto with pickled sapphire grass
Puff pastry tartlet of spinich and butter fried duck egg with shaved parmesan and cep sprinkles
Steamed razor clams with lemon and mango vinaigrette

Coffee and tea Our famous blue mountain coffee served in an individual caffetiere with homemade biscotti biscuit.
Blue Mountain reserve coffee Served the same as above, but just that little bit more special.
English tea Served the traditional way just the way it should be.
